Storage, Caffeine and Production

How to keep stored tea, how much caffeine black tea carries, and the 2022 production figures for China, India and the world.

Tea must be kept at room temperature in an air-tight container. Storage life extends with a desiccant, vacuum sealing or refrigeration — each method slows the moisture and oxygen exposure that degrades leaf over months of storage.

Black tea contains 2 to 4 percent caffeine. The figure is a share of the dry leaf and sits alongside the brewing parameters on the main table: dose 2 g per 100 ml, temperature 90–98 °C, time 3–5 minutes.

In 2022 China produced 14.53 million tonnes of tea, India 5.97 million tonnes and the world 29.76 million tonnes. The four biggest producing countries together account for 81% of that world figure.

These production numbers give scale to the dose on the brewing table: the 2 g weighed out per 100 ml comes from a crop measured in tens of millions of tonnes, and the storage rules apply to leaf drawn from that same supply.

Storage and brewing close the same loop — measure the dose, hold the temperature, pour out completely, then return the unused leaf to an air-tight container at room temperature.
